Owner Aaron Diaz & Executive Chef Marco Marmol
This is your chance to try the amazing food of Noche before they officially open. Aaron Diaz worked alongside Marco Marmol over a decade ago in a small Mexican restaurant in West Texas. At that time, Aaron was a young server and Marco a young line cook. Little did they know that life would reunite them 10 years later and thousands of miles away from Midland, Texas. Aaron moved to Louisville to open and manage a restaurant while life brought Marco and his family to Louisville around the same time. Last year, Aaron decided to pursue his passion and open his own concept, now known as Noche and was in pursuit of an Executive Chef. Fate brought the old friends together, Marco now an Executive Chef with a culinary degree from Le Cordon Bleu, energetically joined the Noche team.
