I love it when we can bring in a chef from a restaurant that does something original. That said, Mayan Cafe definitely fits the bill. This Louisville staple doesn’t really have an equal when it comes to fusing traditional Mayan flavors, ingredients & cooking techniques with local, sustainably-farmed ingredients and we are so excited to have them back at Millie’s.
